Storage – Fresh truffles should be stored in a very dry environment, best in a cool, dark dry spot for up to 1 week. If stored the fridge put into a sealed container to avoid any moisture affecting the truffles. To extend shelf-life you can freeze truffles in an airtight container, then thaw by first putting into fridge and then onto the counter in the same container until they have reached room temperature.
*Fast fluctuations in temperature can lead the truffles to sweat, which isn’t a health risk but they might look a bit less beautiful – fix this by tossing them again in a bit of cocoa powder before serving.
