All of our Bulk Chocolate – rough & untempered is Fairtrade and made with organic cacao. These chocolate bases can also be called ‘couveture’, cooking chocolate or ceremonial cacao/cocoa mass (for the 100% variety).
Because this chocolate has not been tempered (made shelf stable, shiny & snappy) it has ‘bloom’ marks which are whitish spots which doesn’t affect the tastiness. It also has a bubblier texture, which people love.
Exploding Tree HQ is run by head chocolate maker Allison Roberts and is located around the back of our own home in beautiful Clonakilty, West Cork (Ireland). All of our chocolate is made in-house from-the-bean by roasting, winnowing and grinding Fairtrade organic cacao. Our favourite sweetener is coconut sugar, we use it because it is better for your body & the planet (low GI & UN declared it the world’s most sustainable sweetener) and we love its caramel flavour.
Small Business Big Heart
We believe that small is beautiful and that small(er) businesses (and bicycles!) are the answer to so many problems. Rooted in community, we are able to adapt quickly to change and can manage and minimise waste much more effectively than big business (and we don’t need to fly to meetings!). All of our packaging is biodegradable or compostable & we love to reduce packaging waste further by refilling your bags here are the HQ or through bulk and minimally wrapped products via our web shop.
